How to make the best banana bread? Simple! Follow my recipe. This banana bread uses only two bananas. It has a nice crisp crumb, yet it’s moist inside and very tasty.
Ingredients:
1/4 cup (60 gm) softened unsalted butter
1/4 cup (60 ml) oil (I used avocado oil)
1 cup (200 gm) granulated sugar
2 large eggs
1/2 cup (120 ml) buttermilk
1 tsp (5 ml) vanilla
2 cups (240 gm) all-purpose flour
1/2 tsp (3 gm) salt
1 tsp (5 gm) baking soda
2 medium sized very ripe bananas
Directions:
- Mash the two bananas coarsely with a fork. Set aside.
- Put butter, oil, and sugar in a bowl. Beat with an electric mixer. Cream the mixture until smooth (about 5 minutes)
- Add eggs one at a time, allowing to emulsify the mixture before adding the other egg. Mix with the cream mixture until completely incorporated. Set aside.
- In a bowl, sift the flour, salt, and baking soda. Stir with a whisk.
- Add the dry ingredients to the wet ingredients. Gently stir with a whisk until just combined.
- Put the batter in a loaf pan lined with parchment paper.
- Bake at 350 deg Fahrenheit for about 50-60 mins or until golden brown and skewer comes out clean after inserted in the bread.
