This is a simple and easy way to make guacamole with a twist! It has kale in it! This kale guacamole dish is so delicious that it will encourage your kids to eat more vegetables.
- 4 Lacinato kale stalks (also called dino/dinosaur or black kale)
- 2 Avocados (medium)
- 2 Garlic cloves
- 1 Lemon (juiced)
- 1/2 Onion (chopped)
- 6 Cilantro stalks
- 2 Green onion stalks
- Salt & Pepper
Boil the kale until tender (about 6 mins). Drain. Rinse with cold water. Drain again.
Remove excess water from Kale using a paper towel.
Chop kale into small pieces. Put in a bowl. Add garlic and avocados to kale. Blend (using an immersion blender or food processor) until smooth.
Chop onions, cilantro, and green onions into small pieces, then add to the mixture. Add salt and pepper to taste.
Mix, mix, mix. Serve with plain tortilla chips.
