Kale Guacamole

This is a simple and easy way to make guacamole with a twist! It has kale in it! This kale guacamole dish is so delicious that it will encourage your kids to eat more vegetables.

Ingredients
  

  • 4 Lacinato kale stalks (also called dino/dinosaur or black kale)
  • 2 Avocados (medium)
  • 2 Garlic cloves
  • 1 Lemon (juiced)
  • 1/2 Onion (chopped)
  • 6 Cilantro stalks
  • 2 Green onion stalks
  • Salt & Pepper

Instructions
 

  • Boil the kale until tender (about 6 mins). Drain. Rinse with cold water. Drain again.
  • Remove excess water from Kale using a paper towel.
  • Chop kale into small pieces. Put in a bowl. Add garlic and avocados to kale. Blend (using an immersion blender or food processor) until smooth.
  • Chop onions, cilantro, and green onions into small pieces, then add to the mixture. Add salt and pepper to taste.
  • Mix, mix, mix. Serve with plain tortilla chips.
