Ingredients
Carrot Cake Recipe:
- 2 1/2 cup AP flour
- 1/2 cup Sugar
- 1 tsp Baking powder
- 1 tsp Salt
- 1/2 cup Brown sugar
- 4 Large eggs
- 1 cup Cooking oil (avocado oil recommended)
- 1 lb Carrots (shredded)
- 1 cup Raisins
- 3/4 cup Walnuts (chopped, optional)
Cream Cheese Frosting:
- 4 oz Unsalted butter (softened)
- 250 gm Cream cheese (softened)
- 1/2 cup Powdered sugar
- 1 tsp Vanilla
Decorations:
- 1-2 drops Wilton food coloring gel (orange)
- 1-2 drops Wilton food coloring gel (leaf green)
Instructions
How to make the Carrot Cake:
- In a large bowl, combine all dry ingredients except for the sugars, then set aside.
- In a separate bowl, combine white and brown sugar with oil and eggs and mix until smooth.
- Pour the liquid ingredients to the dry ingredients and mix until well incorporated and smooth.
- Add the carrots, raisins, walnuts, and to the batter, fold with a spatula until well incorporated but don't over mix.
- Pour the carrot cake batter on to a parchment lined cake pan. I used 8 inches.
- Bake for 350°F until brown or golden. My baking time took about 60-70 mins.
How to make the Cream Cheese Frosting:
- In a large bowl, mix the softened cream cheese with a mixer until smooth.
- Add the softened butter and mix until smooth.
- Add the powdered/icing sugar and vanilla. Keep mixing until the icing looks nice and smooth.
- Set aside a small scoop of icing for decoration.
How to assemble the Carrot Cake:
- Cut the pointy top portion of a cake to make a flat top. Set aside the crumbs for snacking if you wish.
- Cut the cake twice horizontally to make three layers. Refer to the video for a demonstration.
- Add an even layer of cream cheese frosting on the bottom layer. Smooth with a knife spatula.
- Add a layer of the cake on top. Then add another layer of cream cheese on the second layer. Then put the top layer of cake on top.
- Add the last cream cheese layer on the top and smooth with the knife spatula.
How to decorate the Carrot Cake:
- Sprinkle with cinnamon, nuts, or raisins on the top layer for a simple decoration.
- To make carrot icing, add the food coloring to some icing set aside. Divide into two portion for orange and green.
- Mix the food coloring well into the icing. Place the colored icing in a resealable bag, and then cut a small hole at the tip. You will use this as a piping bag to pipe carrot shapes and leaves.
